Hiring and scheduling training of new hires, as well as setting pay rates based on company guidelines? Scheduling all shifts for cooks and dishwashers in accordance with business load? Controlling and directing food preparation processes and any related activities? Maintaining proper inventories of items (produce, proteins, dairy, breads, dry goods) used in preparation of food items on all menus. Also coordinating with Bar Manager to minimize waste and assure availability of shared items? Overseeing work of subordinates. Monitoring dishes as they leave the kitchen; tasting sauces and other items to ensure freshness? Controlling portion sizes and monitoring waste? Performing routine inspections and maintenance on kitchen equipment including refrigeration and dishwashing equipment. Arranging repairs when necessary? Maintaining records of kitchen and dishwashing staff, i.e., new hire packets, attendance, sick days, food handler?s certification.? Ensuring that high standards of hygiene, cleanliness and safety are maintained throughout all kitchen areas at all times? Fostering a climate of cooperation and respect between co-workersRequirements:? Proven experience as Chef/Manager. Minimum of 10 years culinary experience.? Ability in dividing responsibilities and oversight of execution.? Strong communication and leaderships skills? Understanding of useful computer programs (Microsoft Excel/Word, POS system, etc)? Credentials in Food Handler?s Manager training? Extensive food and wine knowledge? Knowledge of purchasing, ordering, receiving, food costing and inventory procedures
